Chicken Noodle Soup Ricipe
Well… in my opinion lol! Ok so i’ve been obsessed with homemade Chicken Noodle Soup and I literally can’t stop making it! It’s super easy to make and takes less than 20 min to cook. My recipe is super simple and will def be your new go to quick soup on a cold winters night.

Ingredients:
Serving 1 or 2
1 Carrot Stick, chopped
1 Celery Stick, chopped
1 Small Shallot, chopped
3 Garlic Cloves, chopped
2 Tabs of Butter
1/2 Cup of Egg Noodles
2 Cups Chicken Stock
1 Cup Water
1/2 Cup Rotisserie Chicken(Dark Meat suggested), shredded
Small handful of parsley, chopped
1 Bayleaf (optional)
Small Slice of Parmesan Cheese Rind (Optional)
Seasoning to Taste (Salt, Pepper, All Spice, Chicken Bouillon, Garlic Powder, etc…)
Directions
Heat 1 tab of butter on low heat until melted in a soup pot. Add the shallots, carrots, celery, garlic and your fav seasoning. Cook down until the vegetables are slightly soft. Store often for 1 to 2 minutes.
Add chicken stock and water. Add the lid and wait until it comes to a bowl over medium heat.
Add the noodles, rotisserie chicken, and parmesan cheese rind and cook until the the pasta is cooked to your liking.
Taste and check if more seasoning is needed. Add parsley and stir.
Add 1 tab of butter and let simmer for 5 min
Serve with fresh parsley on top
