Easy Pasta Carbonara Recipe

So when I’m craving an easy brunch my go to is always a pasta carbonara. It’s so simple and gives me everything I love about brunch in a pasta bowl.

Pasta Carbonara Recipe:

INGREDIENTS:

  • Pasta(my favs are bucatini and rigatoni)

  • Parmesan

  • Pecorino

  • 1 Egg

  • 1 Egg Yolk

  • Pancetta(other options: Guanciale, Bacon and Prosciutto)

  • Black Pepper

  • Salt

  • Pasta Water

RECIPE (Serves 1 or 2):

  • Boil Pasta with salt (remember salty like the sea) and cook to your liking

  • In a mixing bowl add the eggs and whisk well

  • Add about 1/4 cup of parmesan and pecorino cheese to the eggs

  • Crack the black pepper into the egg cheese mixture(you want a lot of black pepper)

  • In a pan cook the pancetta until it is cooked, then remove it from the heat to slightly cool down the pan.

  • Add the cooked pasta to the pan with the pancetta and slowly add the egg mixture.

  • Slowly mix and add pasta water to create the sauce.

  • Place burner on low heat and mix until everything is well combined without over cooking the eggs.

  • Plate the pasta and garnish with black pepper, pecorino and parmesan cheese

  • And Enjoy!
