Easy Pasta Carbonara Recipe
So when I’m craving an easy brunch my go to is always a pasta carbonara. It’s so simple and gives me everything I love about brunch in a pasta bowl.

Pasta Carbonara Recipe:
INGREDIENTS:
Pasta(my favs are bucatini and rigatoni)
Parmesan
Pecorino
1 Egg
1 Egg Yolk
Pancetta(other options: Guanciale, Bacon and Prosciutto)
Black Pepper
Salt
Pasta Water
RECIPE (Serves 1 or 2):
Boil Pasta with salt (remember salty like the sea) and cook to your liking
In a mixing bowl add the eggs and whisk well
Add about 1/4 cup of parmesan and pecorino cheese to the eggs
Crack the black pepper into the egg cheese mixture(you want a lot of black pepper)
In a pan cook the pancetta until it is cooked, then remove it from the heat to slightly cool down the pan.
Add the cooked pasta to the pan with the pancetta and slowly add the egg mixture.
Slowly mix and add pasta water to create the sauce.
Place burner on low heat and mix until everything is well combined without over cooking the eggs.
Plate the pasta and garnish with black pepper, pecorino and parmesan cheese
